We laid our beloved Drago up for a long slumber in 36 “Heaven Hills” barrels in March-double the production from last year! There really is nothing finer than filling those barrels up with a huge beer like Drago-as the beer goes in, the bourbon-soaked air is forced out of the barrel straight into our waiting noses. Sort of like a bourbon-soaked jet stream. While we’ve done our best to brew a great big Russian Imperial Stout, the real magic has just begun. Eight months of aging in bourbon barrels will transform a young, “green” beer into a truly complex and nuanced delicacy. The hints of vanilla, dark cherry jammy goodness slowly infuse into Drago as the sun moves north, and become more pronounced as summer shifts to fall. By Thanksgiving, Ivan will come out of those barrels swinging, full of amazing flavors that can only come from a long and patient process that we love more every year.
